Landon and I made a really yummy dinner this evening. We ate the soup out of homemade bread bowls that we made this afternoon from scratch. Both were so easy to make and so good! Enjoy the soup recipe...
Baked Potato Soup
Ingredients
1 pound baking potatoes, cut into cubes
1 (12.25 ounce) can chicken broth
1 cup milk
3 slices bacon, cooked and crumbled
3/4 cup cheddar cheese
2 tablespoons sliced green onions
1/4 cup sour cream
Place cubed potatoes in a large microwaveable bowl; microwave on HIGH 5 minutes, stirring after 2 1/2 minutes. Add broth and milk to bowl; stir. Microwave on HIGH 10 minutes, stirring after 5 minutes. Mash potatoes with a potato masher. Reserve 2 tablespoons each of the bacon and cheese and 1 tablespoon of the green onions; set aside. Add remaining bacon, cheese, and onions to soup. Serve topped with bacon, cheese, onions, and sour cream.
