9 Days

Only 9 days until we are on the beaches of Mexico!!! Woohoo! Our last few days have been spent daydreaming of the ocean and relaxation. I think I might just camp out under a palapa with a book for the entire week!

Recipe: Macaroni and Cheese

Landon and I have a never ending search for the most perfect homemade macaroni and cheese. Sunday night we tried a recipe that is only semi-homemade, but definitely the best tasting mac and cheese we've made! Yummy!

Macaroni and Cheese

1 package Kraft Deluxe Macaroni and Cheese Dinner (we use the 2% kind)
1 cup mozzarella cheese
1/2 cup sour cream (we use fat-free)
1/4 tsp pepper
6 Ritz cracker, crushed (we use reduced-fat)

Heat oven to 375 degrees. Prepare Kraft Deluxe Macaroni and Cheese Dinner as directed on box. Stir in mozzarella cheese (save just a little for the top), sour cream, and pepper. Place in a baking dish. Sprinkle with remaining mozzarella cheese and Ritz crackers. Bake 2o minutes.

Birthday Brat

Well, I'm officially getting old. Yesterday was my 27th birthday!! Landon spoiled me all weekend...calling me the "birthday brat." Ha! We basically spent 4 days together just hanging out and doing a little celebrating. He went above and beyond, and I loved it! Landon, thanks for giving me the most wonderful birthday!!!

Lake Weekend

Happy 4th of July! We hope everyone had a wonderful long weekend! Landon and I enjoyed a few great days at the lake with my family. We had so much fun!!!

My absolute favorite part of the weekend...the golf cart parade. On Saturday morning, everyone decorated their golf carts and threw candy to kids as they paraded through the neighborhood. It's the small things. :)

It did storm like crazy on Saturday (2 inches of rain), but we managed to find a window of time to shoot off the fireworks before we were in danger of getting struck by lightening (for real).

The List

Ummm, has anyone used Craigslist? I'm sure Landon and I are way behind the rest of the world, but we listed our first two items last night. We listed his old bed head board and our old microwave. Both in great condition, just not needed. They have both sold, less than 12 hours later. And, I feel like I priced them both high, but no one even flinched at either of the prices.

The head board was the first thing I listed at around 5:30pm last night...I got a call from an interested buyer around 6:30pm last night...we met the buyer at a neutral, safe location at 7:30pm...they paid cash and hauled the bed away and we drove home giddy. I'm not even kidding. Is this normal?! I feel like we just won the lottery or something.

We were telling my parents last night that we were going to sell the fixtures off the walls and the clothes off our backs. I can see why people (ahem, Dad) get addicted to finding deals and selling them on ebay and Craigslist. So fun!
